Smoky Pork Belly Burnt Ends (Restaurant-Style Pork Candy)

These addictive pork belly cubes get double-cooked for the ultimate combination of crispy exterior and buttery interior. The secret is the two-stage cooking process that transforms humble pork belly into pure gold.

Ingredients

  • 1 lb pork belly, skin removed, cut into 1-inch cubes
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1/2 tsp cayenne pepper
  • 3 tbsp barbecue sauce
  • 2 tbsp butter
  • 1 tbsp honey

Instructions

    Preheat oven to 275°F. Mix brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne in a bowl.

    Toss pork belly cubes with the spice mixture until evenly coated. Place on a rimmed baking sheet lined with parchment.

    Bake for 2 hours until pork is tender and starting to render fat. Remove and increase oven temperature to 400°F.

    Transfer pork cubes to a cast iron skillet or small baking dish. Mix barbecue sauce, butter, and honey, then toss with the pork.

    Return to oven for 15-20 minutes until edges are caramelized and sticky. Let rest 5 minutes before serving hot.
