Authentic Philly Cheesesteak with Caramelized Onions
You can't get Amoroso rolls outside Philly, but a good hoagie roll will do justice to this iconic sandwich. The key is paper-thin ribeye, properly caramelized onions, and the right cheese blend.
Ingredients
6 oz ribeye steak, sliced paper-thin
1 large yellow onion, sliced thin
1 oz American cheese, sliced
1 oz provolone cheese, sliced
1 10-inch hoagie roll
2 tbsp vegetable oil
1 tbsp butter
1 set lettuce, tomato, onion (optional)
1 pinch salt
1 pinch black pepper

Heat 1 tablespoon oil in a large skillet or griddle over medium heat. Add sliced onions with a pinch of salt and cook, stirring occasionally, until deeply caramelized and golden brown, about 15-20 minutes. Remove and set aside.

Slice the hoagie roll lengthwise, leaving it hinged. Lightly toast the interior if desired.

Increase heat to medium-high and add remaining oil to the same skillet. Add the thinly sliced ribeye, breaking it up with a spatula. Cook for 2-3 minutes until just cooked through, seasoning with salt and pepper.

Return the caramelized onions to the skillet with the beef and toss to combine. Immediately top with both American and provolone cheese slices.

Using a spatula, scoop the cheesy beef and onion mixture into the hoagie roll while the cheese is still melting. Add LTO if desired and serve immediately.
