Classic Oklahoma-Style Smash Burgers with Caramelized Onions

Bring the authentic Oklahoma smash burger experience home with this technique that presses thin beef patties for maximum crust and flavor. The secret is using a heavy spatula to create those crispy, lacy edges that make smash burgers legendary.

Ingredients

  • 12 oz ground beef (80/20 blend)
  • 1 large yellow onion, thinly sliced
  • 4 slices American cheese
  • 4 brioche burger buns
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 1/2 tsp garlic powder

Instructions

    Make the sauce by whisking together mayonnaise, ketchup, mustard, and garlic powder. Set aside.

    Heat a cast iron skillet or griddle over medium-high heat. Add 1 tablespoon oil and the sliced onions. Cook, stirring occasionally, until deeply caramelized, about 8-10 minutes. Remove and keep warm.

    Form the ground beef into 4 loose balls, about 3 oz each. Season with salt and pepper. Do not pack tightly.

    Add remaining oil to the hot skillet. Place beef balls in the pan and immediately press down hard with a heavy spatula, flattening to about 1/4 inch thick. Press for 10-15 seconds to create maximum surface contact.

    Cook without moving for 2-3 minutes until edges are crispy and lacy. Flip and immediately top 2 patties with cheese. Cook another 1-2 minutes.

    Toast the brioche buns cut-side down in the same pan until golden, about 1 minute.

    Spread sauce on both bun halves. Stack one plain patty on the bottom bun, add caramelized onions, then the cheese-topped patty. Crown with the top bun and serve immediately.
