Mediterranean Chicken Wrap with Green Goddess Dressing
Transport yourself to the Mediterranean with this fresh and flavorful wrap. Juicy grilled chicken mingles with sun-dried tomatoes and crisp vegetables, all brought together by a creamy green goddess dressing that makes this wrap absolutely irresistible.
Ingredients
1 lb boneless skinless chicken breast
2 tbsp olive oil
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
4 large flour tortillas
1/3 cup sun-dried tomatoes in oil, chopped
1/2 medium red onion, thinly sliced
1 medium zucchini, julienned or thinly sliced
4 cups mixed greens and arugula
1/2 cup mayonnaise
1/4 cup fresh basil leaves
2 tbsp fresh parsley
1 clove garlic
1 tbsp lemon juice
1 tbsp olive oil

Make the green goddess dressing by combining mayonnaise, basil, parsley, garlic, lemon juice, and 1 tablespoon olive oil in a food processor. Blend until smooth and creamy. Season with salt and pepper to taste.

Season chicken breasts with oregano, garlic powder, salt, and pepper. Heat 2 tablespoons olive oil in a grill pan or skillet over medium-high heat.

Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes, then slice into strips.

Warm tortillas in a dry skillet or microwave until pliable.
