Ingredients
1 lb frozen French fries
6 oz porchetta or Italian-seasoned pork belly, diced
2 tbsp olive oil
1/4 cup fresh parsley, finely chopped
2 cloves garlic, minced
1 tbsp lemon zest
2 tbsp fresh lemon juice
1/4 cup grated Parmesan cheese
1/4 tsp red pepper flakes
Salt and black pepper to taste
Instructions
1
Preheat oven to 425°F. Spread frozen fries on a large baking sheet and bake according to package directions until golden and crispy, about 20-25 minutes.
2
While fries bake, heat olive oil in a large skillet over medium-high heat. Add diced porchetta and cook, stirring occasionally, until crispy and heated through, about 5-7 minutes.
3
Make the gremolata by combining chopped parsley, minced garlic, lemon zest, lemon juice, and red pepper flakes in a small bowl. Season with salt and pepper.
4
Transfer hot fries to a serving platter. Top with crispy porchetta pieces and drizzle with gremolata.
5
Finish with grated Parmesan cheese and serve immediately while fries are still hot and crispy.
