This nutrient-packed salad combines the beloved flavors of Green Goddess dressing with hearty farro and fresh vegetables for a satisfying meal. The homemade dressing is surprisingly easy to make and elevates simple ingredients into something special.

Ingredients

  • 1 cup farro
  • 3 cups water or vegetable broth
  • 5 oz baby arugula
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 cup house croutons or store-bought
  • 2 tbsp grated Pecorino Romano
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp fresh chives, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh tarragon, chopped
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp anchovy paste (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

    Cook farro according to package directions in water or broth until tender, about 25-30 minutes. Drain and let cool to room temperature.
