Crispy Beer-Battered Chicken Tenders with Buffalo Sauce
Skip the drive-thru and make restaurant-quality chicken tenders at home. The beer batter creates an incredibly light and crispy coating, while the homemade buffalo sauce adds the perfect tangy kick.
Ingredients
1 lb boneless chicken breast, cut into 4 strips
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp garlic powder
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
3/4 cup cold beer
1/4 cup hot sauce (like Frank's RedHot)
2 tbsp butter
1 tbsp white vinegar
1/4 tsp garlic powder
4 cups vegetable oil for frying

Heat oil to 350°F in a heavy pot or deep fryer. Pat chicken strips dry and season lightly with salt and pepper.

In a large bowl, whisk together flour, cornstarch, garlic powder, paprika, salt, and pepper. Slowly whisk in cold beer until smooth - batter should coat the back of a spoon.

For buffalo sauce, melt butter in a small saucepan. Whisk in hot sauce, vinegar, and garlic powder. Keep warm.

Dip each chicken strip in batter, letting excess drip off. Carefully lower into hot oil and fry for 4-5 minutes until golden brown and internal temperature reaches 165°F.

Remove tenders and drain on paper towels for 30 seconds. Toss immediately in warm buffalo sauce or serve sauce on the side.
