Decadent Berry Berry French Toast - Restaurant Style at Home
Bring the brunch experience home with this indulgent French toast that rivals any restaurant. The secret is using thick brioche and letting it really soak up that rich custard base.
Ingredients
4 slices thick-cut brioche bread (1-inch thick)
3 large eggs
1/2 cup heavy cream
2 tbsp sugar
1 tsp vanilla extract
1/4 tsp ground cinnamon
1/8 tsp salt
2 tbsp butter for cooking
1 cup mixed fresh berries (blueberries, strawberries, raspberries)
1/3 cup sugar for compote
2 tbsp water
1 tsp lemon juice
1/2 cup fresh berries for garnish
1/2 cup heavy cream for whipping
1 tbsp powdered sugar
Instructions
1
Make the berry compote by combining 1 cup mixed berries, 1/3 cup sugar, water, and lemon juice in a small saucepan. Cook over medium heat for 8-10 minutes, stirring occasionally, until berries break down and mixture thickens. Set aside and keep warm.
2
Whisk together eggs, heavy cream, 2 tablespoons sugar, vanilla, cinnamon, and salt in a shallow dish until well combined.
3
Dip each slice of brioche into the custard mixture, allowing it to soak for 30 seconds per side. The bread should be saturated but not falling apart.
4
Heat butter in a large skillet or griddle over medium heat. Cook the soaked brioche slices for 3-4 minutes per side until golden brown and cooked through.
5
Meanwhile, whip the heavy cream with powdered sugar until soft peaks form.
6
Serve the French toast immediately topped with warm berry compote, fresh berries, and a dollop of whipped cream.
