**Prep the wings:** Pat wings dry with paper towels. Toss in cornstarch, garlic powder, salt, and pepper until evenly coated. Let rest 10 minutes.

**Make the wing sauce:** Whisk together gochujang, soy sauce, honey, sesame oil, and rice vinegar in a small bowl. Set aside.

**Cook the wings:** Heat 1 inch of neutral oil in a deep skillet to 350°F. Fry wings in batches for 10–12 minutes, turning once, until golden and cooked through. Alternatively, bake at 425°F on a wire rack over a sheet pan for 40–45 minutes, flipping halfway. Drain on a rack.

**Sauce the wings:** While still hot, toss wings in the gochujang sauce until fully coated and glossy. Set aside.

**Make the fried rice:** Heat a large wok or skillet over high heat until smoking. Add 2 tbsp neutral oil, then add garlic and half the scallions. Stir-fry 30 seconds.

Push aromatics to the side, add beaten eggs, and scramble until just set. Break into pieces and mix with the garlic.

Add the cold rice, breaking up any clumps. Stir-fry vigorously for 2–3 minutes until heated through and lightly charred in spots.

Add peas, carrots, and corn. Toss to combine. Pour in soy sauce, oyster sauce, and sesame oil. Stir-fry another 1–2 minutes.

**Plate:** Mound fried rice on a plate. Arrange wings alongside. Drizzle with chili oil, scatter remaining scallions over everything, and serve with lime wedges.
