Where this dish comes from

Buffalo-style chicken wings were born at the Anchor Bar in Buffalo, New York in 1964, where Teressa Bellissimo deep-fried leftover wings and tossed them in a cayenne-butter sauce. The format — fried wings, hot sauce, celery, blue cheese — spread through American sports bars through the 1970s and 1980s and became the definitive bar snack by the time the Super Bowl era hit. Today wings are offered in dozens of sauce variants, but the core technique of frying whole wing sections and tossing to order remains unchanged across virtually every American sports bar.

Ingredients
  • 6 chicken wing pieces (3 drumettes + 3 flats), patted very dry
  • 1 tbsp baking powder (NOT baking soda)
  • ½ tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • **Buffalo Sauce:** 3 tbsp Frank's RedHot Original + 1½ tbsp unsalted butter, melted together
  • 1 large russet potato, cut into ½-inch fries (or 2 cups frozen fries)
  • 2 tbsp vegetable oil (for fries, if oven-baking)
  • Salt to taste
  • **Ranch dip:** 3 tbsp mayo + 2 tbsp sour cream + 1 tsp dried dill + ½ tsp garlic powder + ½ tsp onion powder + 1 tbsp buttermilk or milk + pinch of salt
  • 1 scallion, sliced on the bias, for garnish
Instructions

    **Dry the wings:** Pat wings completely dry with paper towels. Toss in a bowl with baking powder, salt, garlic powder, and pepper until evenly coated. Place on a wire rack set over a baking sheet, uncovered, and refrigerate at least 1 hour (or overnight for best results).

    **Prep the ranch dip:** Stir together mayo, sour cream, dill, garlic powder, onion powder, and buttermilk in a small bowl. Season with salt, cover, and refrigerate until serving.

    **Bake the wings:** Preheat oven to 425°F (220°C). Bake the wings on the rack for 20 minutes, flip them, then bake another 20–25 minutes until the skin is crispy and deeply golden and the internal temperature reaches 165°F.

    **Cook the fries:** If using fresh-cut potatoes, toss fries in 2 tbsp oil and spread on a separate baking sheet. Slide into the oven alongside the wings for the last 25 minutes, flipping once halfway. If using frozen fries, follow package directions.

    **Make the sauce:** While wings finish, melt butter in a small saucepan over low heat, stir in Frank's RedHot, and keep warm.

    **Toss the wings:** Pull wings from the oven, transfer immediately to a bowl, pour the warm Buffalo sauce over them, and toss until fully coated.

    **Plate:** Pile wings on one side of a large plate or basket and pile the salted fries on the other. Add the ranch dip in a small bowl alongside. Garnish wings with sliced scallion and serve right away.
