The composed vegetable bowl traces its roots to the everyday comida corrida of central Mexico — a midday set meal that always included a base of rice, a portion of beans, and whatever guisado (cooked vegetable or stew) was on hand. In the United States, the format was popularized alongside burrito-bowl culture in the 1990s and 2000s, but the underlying logic is purely Mexican home cooking: stretch simple ingredients into a balanced, satisfying plate by layering texture and flavor rather than relying on a single centerpiece protein.

Ingredients
  • 1 cup long-grain white rice
  • 1 ½ cups chicken or vegetable broth
  • ½ cup tomato purée
  • 1 tbsp neutral oil
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ tsp cumin
  • Salt to taste
  • 1 medium zucchini, diced
  • 1 cup fresh or frozen corn kernels
  • ½ white onion, small dice
  • 1 serrano or jalapeño, minced
  • 1 tbsp butter or oil
  • **Guacamole:** 2 ripe avocados, juice of 1 lime, ¼ white onion minced, 1 tbsp cilantro, salt
  • **Pico de Gallo:** 2 Roma tomatoes diced, ¼ white onion minced, 1 jalapeño minced, juice of 1 lime, cilantro, salt
  • ¼ cup Mexican crema or sour cream
  • Handful of tortilla chips
  • Fresh cilantro and lime wedges to serve

    **Make the rice:** Heat oil in a saucepan over medium-high. Toast dry rice until lightly golden, about 3 minutes. Add tomato purée and stir 1 minute. Pour in broth, season with salt, bring to a boil, then reduce heat to low, cover, and cook 18 minutes. Fluff with a fork.

    **Warm the beans:** Combine drained black beans in a small saucepan with cumin, a pinch of salt, and a splash of water. Heat over medium-low until warmed through, about 5 minutes.

    **Make the calabacitas:** Heat butter in a skillet over medium-high. Sauté onion and jalapeño until soft, 3 minutes. Add zucchini and corn, season with salt, and cook until zucchini is just tender and lightly golden, about 5–6 minutes.

    **Make guacamole:** Mash avocados with lime juice, onion, cilantro, and salt until creamy but slightly chunky. Adjust seasoning.

    **Make pico de gallo:** Combine tomatoes, onion, jalapeño, cilantro, and lime juice. Season with salt and let sit 5 minutes for flavors to meld.

    **Assemble:** Warm a wide bowl. Add rice to one side and beans to the other. Nestle calabacitas in the center. Add a scoop of guacamole, a spoonful of pico de gallo, and drizzle crema across the top.

    **Finish:** Tuck a handful of tortilla chips around the edge, scatter fresh cilantro over everything, and add two lime wedges on the side. Serve immediately.
