Where this dish comes from
The torta — Mexico's definitive sandwich — has been served from fondas and market stalls since at least the 19th century, with the telera and bolillo rolls tracing their form to French baguette culture introduced during the Juárez era. Tripa, the small intestine of beef, became a taquería staple throughout northern and central Mexico as a nose-to-tail taco filling; translating it into a torta is a natural market-stall evolution found especially in Mexico City's neighborhood fondas and in border cities like Ciudad Juárez and Monterrey.
1 tsp salt, 1 tsp garlic powder, ½ tsp cumin, ½ tsp dried oregano (for braise)
2 cups water + 1 cup beef broth (for braise)
2 telera or bolillo rolls (or sub hoagie rolls)
½ cup canned refried beans, warmed
1 ripe avocado, sliced
¼ cup pickled jalapeño slices
½ cup shredded iceberg lettuce
¼ cup Mexican crema (or sour cream thinned with 1 tbsp milk)
**Pico de Gallo:** 2 roma tomatoes diced, ¼ white onion minced, 1 jalapeño minced, ½ cup cilantro chopped, juice of 1 lime, salt to taste
**Quick Salsa Taquera:** 4 dried chiles de árbol, 2 tomatillos husked, 2 garlic cloves, ½ tsp salt, ½ cup water — blended after dry-toasting
Neutral oil for cooking
2 lime wedges for serving

**Braise the tripe:** Place tripe pieces in a medium saucepan with water, broth, salt, garlic powder, cumin, and oregano. Bring to a boil, skim foam, reduce heat, cover, and simmer 1.5–2 hours until tender but not falling apart. Drain and pat very dry with paper towels. (Can be done a day ahead and refrigerated.)

**Make the pico de gallo:** Combine diced tomatoes, minced white onion, minced jalapeño, and cilantro. Squeeze in lime juice and season with salt. Set aside.

**Make the quick salsa:** In a dry skillet over medium heat, toast dried chiles de árbol and tomatillos 2–3 minutes until lightly charred. Blend with garlic, salt, and water until smooth. Adjust seasoning.

**Crisp the tripa:** Heat a cast-iron skillet or heavy pan over high heat until very hot. Add 1 tbsp neutral oil. Add braised tripe in a single layer (work in batches if needed) and press down with a spatula. Cook undisturbed 3–4 minutes until edges are crispy and caramelized. Flip and cook 1–2 minutes more. Season lightly with salt.

**Toast the rolls:** Split the telera rolls and place cut-side down in the same hot skillet for 1–2 minutes until golden.

**Assemble:** Spread warm refried beans on the bottom half of each roll. Layer on avocado slices, then a generous mound of crisped tripa. Spoon pico de gallo over the tripa. Add pickled jalapeños and shredded iceberg. Spread crema on the top half of the roll.

**Close, press gently, and cut** each torta in half on the diagonal. Serve immediately with a lime wedge and the salsa taquera on the side.
