Where this dish comes from

Tripa tacos trace their roots to the taquero tradition of central Mexico — particularly Mexico City and Guadalajara — where offal cuts were embraced as economical, flavor-dense proteins cooked on the comal. Served in bowl form, the dish borrows from the modern Mexican 'bowl' format that grew in popularity across northern Mexico and the U.S. border region, making taqueria flavors accessible in a heartier, sit-down presentation while preserving the essential char and texture of the taco cart original.

Ingredients
  • *For the tripa:**
  • 1 lb beef small intestine (tripa), cleaned and cut into 2-inch pieces
  • 1 tsp salt
  • 1 tsp dried oregano
  • 3 garlic cloves, smashed
  • 1 bay leaf
  • Water to cover
  • *For the bowl:**
  • 2 cups cooked Mexican red rice (store-bought mix or homemade)
  • ½ cup fresh pico de gallo (store-bought or homemade)
  • 3 tbsp salsa taquera or salsa de árbol (bottled is fine)
  • 2 tbsp Mexican crema (or sour cream thinned with a splash of lime juice)
  • 2 tbsp pickled red onion
  • Small handful fresh cilantro leaves
  • 1 lime, cut into wedges
Instructions

    **Clean and boil the tripa:** Rinse the intestines thoroughly under cold running water, turning them inside out if possible. Place in a pot, cover with cold water, add salt, oregano, garlic, and bay leaf. Bring to a boil, skim foam, then reduce to a low simmer. Cook uncovered for 1.5–2 hours until tender and no longer rubbery. Drain and let cool slightly.

    **Crisp the tripa:** Cut boiled tripa into 1- to 2-inch pieces if not already done. Heat a cast-iron skillet over high heat until very hot — no oil needed (the fat in the tripa will render out). Add the pieces in a single layer without crowding. Press with a spatula and let sear undisturbed for 3 minutes until the bottom is deeply browned and crispy. Toss and sear remaining sides for 1–2 more minutes. Season with a pinch of salt.

    **Warm the rice:** Heat Mexican rice in a saucepan with a splash of water over medium heat, stirring until hot through, about 3–4 minutes.

    **Assemble the bowl:** Spoon the warm rice into a wide bowl as the base. Pile the hot crispy tripa over the rice.

    **Dress the bowl:** Spoon pico de gallo over the tripa. Drizzle salsa taquera across the bowl. Zigzag the crema over the top.

    **Garnish and serve:** Scatter pickled red onions and cilantro leaves over everything. Add a lime wedge to the side. Serve immediately — tripa softens as it sits.
