The steak bowl is a modern American-Mexican hybrid that draws directly from the taqueria tradition of carne asada plates — a staple across northern Mexico and the border states of California, Texas, and Arizona. Street taquerias have long served carne asada alongside rice, beans, and fresh salsas as a full plato; the bowl format consolidates that plate into a single vessel, popularized in the U.S. through fast-casual chains in the 1990s and 2000s but rooted firmly in norteño beef culture where mesquite-grilled beef is the centerpiece of nearly every family gathering.

Ingredients
  • *For the steak:**
  • 1 lb skirt steak or flap meat
  • 3 tbsp fresh lime juice
  • 2 tbsp orange juice
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1 tbsp neutral oil
  • *For the rice:**
  • 1 cup long-grain white rice
  • 1/2 cup tomato sauce or 1 blended Roma tomato
  • 1 3/4 cups chicken broth
  • 2 tbsp neutral oil
  • 1/2 tsp garlic powder
  • Salt to taste
  • *For the beans:**
  • 1 can (15 oz) pinto or black beans, drained
  • 1 tbsp lard or oil
  • 1/4 white onion, minced
  • 1/2 tsp cumin
  • Salt to taste
  • *For the bowl:**
  • 1 ripe avocado, mashed with lime, salt, and cilantro
  • 1 cup fresh pico de gallo (diced tomato, onion, jalapeño, cilantro, lime)
  • 3 tbsp Mexican crema or sour cream
  • 1/4 cup pickled red onion (red onion soaked 20 min in lime juice + pinch of salt)
  • Fresh cilantro leaves
  • Lime wedges
Instructions

    **Marinate the steak:** Combine lime juice, orange juice, garlic, cumin, chili powder, salt, and oil in a zip-lock bag. Add steak and marinate at least 30 minutes (up to 4 hours in the fridge).

    **Make the rice:** Heat oil in a medium saucepan over medium-high. Add dry rice and toast, stirring, until golden, about 4 minutes. Add blended tomato, garlic powder, and broth. Bring to a boil, reduce heat to low, cover, and cook 18 minutes. Fluff and season.

    **Make the beans:** Heat lard in a small pan. Sauté minced onion until soft, 3 minutes. Add drained beans and cumin, mash roughly with a fork or potato masher. Add a splash of water to loosen. Season with salt.

    **Grill the steak:** Pat steak dry. Heat a cast-iron skillet or grill over high heat until very hot. Cook steak 3–4 minutes per side for medium. Let rest 5 minutes, then slice thinly against the grain.

    **Make quick pico:** Combine 2 diced Roma tomatoes, 1/4 diced white onion, 1 minced jalapeño, a handful of chopped cilantro, and 1 tbsp lime juice. Season with salt.

    **Build the bowl:** Spoon rice into a wide bowl, offset beans to one side. Fan steak slices across the center. Add a dollop of guacamole and a spoonful of pico on opposite sides.

    **Finish:** Drizzle crema over the top, scatter pickled red onion, drop a few cilantro leaves, and tuck a lime wedge on the side. Serve immediately.
