Where this dish comes from

Black beans — frijoles negros — are the dominant bean of Oaxaca, Yucatán, and the southern Mexican states. Cooked from dried with epazote, garlic, onion, and salt until they are soft throughout and the broth has turned deeply purple-black from the bean pigment, black beans have a stronger, more mineral flavor than pinto beans and they are served differently: whole in their broth rather than mashed.

Black Beans

Ingredients
  • 400g dried black beans, rinsed
  • 0.5 white onion; 4 garlic cloves; 2 sprigs fresh epazote (or dried)
  • Water to cover by 3 inches; salt to taste
Instructions

    Cover beans with cold water by 3 inches. Add onion, garlic, and epazote.

    Simmer 2 to 3 hours until beans are completely tender throughout. Do not salt until done.

    Season generously with salt. Simmer 10 more minutes.

    Remove onion. Serve whole beans in their broth. The broth should be deeply purple-black.
