Where this dish comes from

The Quesadilla Grande is the large-format quesadilla — a full 12-inch flour tortilla folded and loaded with cheese and your choice of protein, cooked on the flat top until the exterior is golden and crispy and the cheese inside is fully melted and pulling. It is a meal-sized quesadilla rather than a shared appetizer, cut into 6 wedges and served with the full accompaniment set.

For the Quesadilla Grande

Ingredients
  • 2 large (12-inch) flour tortillas
  • 1 1/2 cups shredded Monterey Jack or Oaxacan string cheese
  • 200g protein of choice (grilled chicken, steak, shrimp, or just beans)
  • 1 tbsp neutral oil
  • Guacamole, sour cream, pico de gallo, salsa, lime wedges
Instructions

    Heat a large flat iron or skillet over medium-high. Add a thin film of oil.

    Lay one flour tortilla flat. Distribute shredded cheese across one half. Add protein over the cheese.

    Fold tortilla over. Press firmly with a spatula.

    Cook until bottom is golden and crispy — about 2–3 minutes. Flip carefully. Cook until cheese is fully melted — 2 more minutes.

    Cut into 6 wedges. Fan on a plate showing the melted cheese at the cut edges.

    Guacamole, sour cream, pico de gallo in ramekins. Salsa. Lime wedge.
