Where this dish comes from

The ground beef bowl is an evolution of the Mexican-American steam-table tradition, drawing from the same pantry as the taco plate and the burrito but served deconstructed in a single vessel. Its roots lie in Tex-Mex border cooking, where affordable ground beef was stretched with cumin, garlic, and dried chiles and served over rice and beans as a filling, economical meal. The bowl format gained widespread traction in the fast-casual boom of the early 2000s, but the flavor logic — spiced meat, starchy base, fresh salsa, dairy cool-off — is as old as the Mexican comida corrida.

  • 1 lb 80/20 ground beef
  • ½ white onion, finely diced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • 1 tbsp tomato paste
  • Salt and black pepper to taste
  • 2 tbsp neutral oil
  • *For the rice:**
  • 1 cup long-grain white rice
  • ¼ cup tomato purée
  • 1¾ cups chicken broth
  • ¼ white onion, minced
  • 2 garlic cloves, minced
  • 1 tbsp neutral oil
  • Salt to taste
  • *For the beans:**
  • 1 can (15 oz) pinto or black beans, drained
  • 2 tbsp lard or butter
  • ¼ white onion, minced
  • Salt to taste
  • *For the bowl:**
  • ½ cup fresh pico de gallo (store-bought or homemade)
  • ¼ cup Mexican crema or sour cream
  • ½ cup shredded Oaxacan, Chihuahua, or Monterey Jack cheese
  • 1 jalapeño, sliced into rounds
  • Fresh cilantro leaves
  • 1 lime, cut into wedges

    **Make the rice:** Heat oil in a saucepan over medium-high. Toast the dry rice, stirring, until it turns golden, about 3-4 minutes. Add onion and garlic; cook 1 minute. Stir in tomato purée and cook 1 minute more. Pour in chicken broth, season with salt, bring to a boil, then reduce to the lowest heat, cover, and cook 18 minutes. Let rest off heat 5 minutes, then fluff with a fork.

    **Make the refried beans:** Melt lard or butter in a small skillet over medium heat. Cook onion until soft, about 3 minutes. Add drained beans and ¼ cup water. Mash with a fork or potato masher to desired texture, stirring until thick and creamy. Season with salt.

    **Cook the beef:** Heat oil in a large skillet over high heat. Add beef and spread flat — let it sear undisturbed for 2 minutes before breaking it up. Add onion and cook until softened, about 3 minutes. Add garlic, cumin, chili powder, paprika, oregano, and tomato paste; stir well and cook another 2 minutes. Season with salt and pepper. The beef should be deeply browned, not gray and wet.

    **Build the bowl:** Add a scoop of rice to one side of a wide bowl. Spoon refried beans opposite. Pile the seasoned ground beef at center.

    **Top and serve:** Scatter shredded cheese over the hot beef. Spoon pico de gallo on top, drizzle crema over the whole bowl, and garnish with cilantro and jalapeño rounds. Serve with a lime wedge on the side.
