Where this dish comes from

French fries arrived in the American diner canon via Belgian and French influence, but the nacho cheese pairing is distinctly American — born from Tex-Mex stadium culture in the 1970s when Ignacio 'Nacho' Anaya's original chile con queso concept was industrialized into a pourable processed cheese sauce. The combo of fries and nacho cheese became a staple of sports bars, diners, and fast-casual spots across the United States by the 1980s and has never left the menu.

Ingredients
  • 1 lb frozen French fries (shoestring or crinkle-cut)
  • 1 cup (about 6 oz) Velveeta or American processed cheese, cubed
  • ¼ cup evaporated milk
  • 2 tbsp pickled jalapeño brine (from the jar)
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • Kosher salt, to taste
  • 1 fresh jalapeño, sliced into rounds (or use pickled slices)
  • 2 scallions, sliced on the bias

    Preheat your oven to 425°F (or heat 2–3 inches of vegetable oil in a deep pot to 375°F for frying). Bake or fry the frozen fries according to package directions until deeply golden and crispy.

    While the fries cook, combine the cubed Velveeta and evaporated milk in a small saucepan over low heat. Stir constantly until fully melted and smooth, about 4–5 minutes.

    Stir in the pickled jalapeño brine, cumin, and chili powder. Taste and adjust seasoning. Keep warm on the lowest heat setting, stirring occasionally so it doesn't scorch.

    The moment the fries are done, season them immediately with kosher salt and pile them into a wide shallow bowl or basket.

    Ladle the warm nacho cheese sauce generously over the top of the fries — you can also serve it in a ramekin on the side for dipping.

    Top with fresh jalapeño rounds and sliced scallions. Eat immediately while the fries are still crispy.
