Where this dish comes from

The chorizo bowl is a contemporary Mexican-American format rooted in the tradition of the plato combinado — the combination plate common across Mexican taquerías and fondas where rice, beans, and a protein anchor the meal. Chorizo mexicano, a fresh (uncured) ground pork sausage seasoned with dried chiles, vinegar, and warm spices, has been a staple of Mexican breakfasts and street food since Spanish colonization introduced the sausage-making tradition. Ingredients
  • 1 cup long-grain white rice
  • 1 (8 oz) can tomato sauce + 1¾ cups chicken broth (for rice)
  • ½ tsp cumin, ½ tsp garlic powder, salt to taste (for rice)
  • 8 oz Mexican chorizo (fresh, uncased — from a tube or casing removed)
  • 1 (16 oz) can refried beans
  • ½ cup pico de gallo (store-bought or homemade: diced tomato, white onion, jalapeño, cilantro, lime juice, salt)
  • 3 tbsp Mexican crema or sour cream
  • Small handful fresh cilantro leaves
  • 1 lime, cut into wedges

    **Make the rice:** In a medium saucepan, heat 1 tbsp neutral oil over medium-high. Add the dry rice and toast, stirring, for 2–3 minutes until golden. Add tomato sauce, chicken broth, cumin, garlic powder, and a big pinch of salt. Bring to a boil, cover, reduce heat to low, and cook 18 minutes. Remove from heat and let steam 5 minutes, then fluff with a fork.

    **Cook the chorizo:** In a skillet over medium-high heat, cook the chorizo, breaking it up with a spoon, until fully cooked through and the edges are caramelized and slightly crispy, about 7–9 minutes. Drain off excess fat by tilting the pan and spooning it out, leaving just enough to keep it moist.

    **Warm the beans:** Heat the refried beans in a small saucepan over medium heat with a splash of water, stirring until smooth and hot. Season with salt if needed.

    **Assemble the bowl:** Spoon a generous scoop of rice into a wide bowl. Ladle warm refried beans alongside the rice in an arc. Mound the crispy chorizo over the rice.

    **Top and serve:** Spoon pico de gallo over the chorizo. Drizzle crema over the top. Finish with a few cilantro leaves and serve with a lime wedge on the side. Squeeze lime over just before eating.
