Alambre is Mexico City's great sizzling skillet preparation — strips of carne asada, bacon, bell peppers, and onions cooked together on a hot comal or iron skillet until the bacon renders, the vegetables soften and char at the edges, and everything melds into a unified preparation topped with melted cheese. It is street food from the taquerías around the Mexico City airport and central bus stations, but it has spread across the country because the combination — beef, bacon, vegetables, melted cheese — is frankly irresistible.
