Mixed greens with fried chicken, bacon, pickled watermelon, tomatoes, cheddar, and watermelon vinaigrette.
Where this dish comes from
The Cobb Salad was invented in 1937 at the Hollywood Brown Derby restaurant by owner Bob Cobb, who made it late one night from ingredients he found in the walk-in. The formula he arrived at by accident became one of the most copied salad compositions in American restaurant history: romaine, chicken, bacon, hard-boiled egg, avocado, tomato, blue cheese, red onion, all arranged in neat rows over the lettuce rather than tossed together. The row arrangement allows each guest to compose each bite with the ratio of toppings they prefer. Balsamic vinaigrette on the side.
Arrange components in parallel stripes across the romaine โ not tossed. Every component in its own row.
FOR THE DRESSING
Ingredients
Red wine vinaigrette or blue cheese dressing
Instructions
1
Dressing in a ramekin on the side. Never pre-dressed.
TIP
Instructions
1
Stripes, not toss. The arranged Cobb reads as a composed dish. Tossed, it reads as a chopped salad. Same ingredients, completely different presentation.
