Lightly fried shrimp and calamari with remoulade sauce, tomato, and lettuce on a 10" Amoroso roll. Served with fries.

Where this dish comes from

The catfish po boy is the freshwater version — cornmeal-crusted catfish fried and stuffed into New Orleans French bread with the full dressed complement. It is less famous than the shrimp or oyster versions but arguable the most Southern: catfish is deeply embedded in the food culture of the Mississippi Delta and it brings a different flavor profile than Gulf seafood.
