Braised pork belly with a fried egg, sriracha, green onions, and vegetable fried rice.

Where this dish comes from

The Korean BBQ bowl translates the restaurant grill experience into a composed bowl — caramelized bulgogi or galbi over steamed rice with banchan components and a drizzle of sesame. Fast-casual genius.

Korean BBQ Bowl

Ingredients
  • Bulgogi beef (thinly sliced, fully marinated in soy, pear, garlic, sesame — cooked in small batches until caramelized with slight char)
  • House-made kimchi (well-aged, not young)
  • Pickled radish (danmuji)
  • Steamed rice
  • Gochujang-sesame drizzle sauce: gochujang + sesame oil + soy + honey
  • Sesame seeds and sliced scallion
Instructions
  1. 1

Cook bulgogi in a screaming-hot pan in small batches — the marinade sugars must caramelize to lacquer. The bulgogi for a bowl can be slightly saucier than table-grilling. Assemble: steamed rice as the base. Caramelized bulgogi over the rice with its sauce pooling around. Kimchi in a distinct mound to one side (keep cold — do not warm kimchi). Pickled radish in another section. Drizzle gochujang-sesame sauce across the bulgogi. Sesame seeds and scallion. Serve immediately.
