Beer battered mushrooms served with Draft Room sauce.
Where this dish comes from
Fried mushrooms are the vegetarian bar food that the diner adopted from casual dining chains in the 1980s and 1990s. Whole button or cremini mushrooms, battered and fried until golden, with a ranch or blue cheese dipping sauce. They are better than their reputation and better made at a diner than at most places that serve them.
12-15 whole button or cremini mushrooms | Batter: 1 cup flour + 1 tsp each garlic powder, onion powder, salt, paprika + 3/4 cup cold beer or water | Neutral oil at 350°F | Ranch for dipping
Instructions
1
Dip mushrooms in seasoned batter. Fry at 350°F for 3-4 minutes until golden. Do not crowd the fryer. Flaky salt immediately from the oil.
